This dinner was given in honor of the victor of the Regional Jeune Commis Competition
held at the Culinary Institute of America (CIA), San Antonio Texas.
Contestants from San Antonio Texas, Houston Texas, Tulsa Oklahoma, and New
Orleans Louisiana came together and competed for the regional title. These
contestants are all winners of their local Jeune Commis Competition -- therefore
this was one tough competition.
